Ingredients

  • 2 kg vegetable oil for frying the chicken (reduce or increase the amount of oil according to your measurement)

  • 1 tsp garlic powder

  • A little bit of white pepper

  • ¼ cup of water

  • 1 tbsp cooking wine (optional)

how to make Mar Far Chicken

  •  Make the sauce: Cut orange, lemon, and ginger in a thin round shape. Boil them with water. After a few minutes of boiling, take a bowl and strain the juice with a strainer. Then add vinegar, sugar, and ketchup with the liquid. Use 1 tsp tomato shades to make the sauce more colourful.

  • Boil the sauce: To make the sauce thicker, boil them in a medium cooking pot. In a separate small bowl, put 1 tbsp potato or corn starch. Then add 2 tbsp water and mix them well. Then slowly pour this mix into the sauce and, with a spoon, continuously stir the sauce.

  •  Cut the chicken: Take a chicken breast and cut them into medium small slices. Try to cut them by about 1 inch or 2.5 centimetres.Cut the chicken
  • Marinate the chicken: In another mixing bowl, put 450g chicken breast, then gradually add all other ingredients, including 1 tsp salt, 1 tsp garlic powder, a little bit of white pepper, and ¼ cup of water. Mix the chicken with all of these ingredients. The water will make your chicken breast moist and juicy. Then wrap the container with a plastic film wrap and refrigerate it for about 30 minutes to 1 hour.

  • Make the batter: In a stand, mix container put 1 egg, 1 tsp salt, 1 tsp garlic powder, 1 cup of water, a little bit of white pepper, 1 tbsp baking powder, ¼ cup of corn starch, 3 tbsp vegetable oil, and 1 ¼ cup of flour. Mix them until they become a smooth batter.

  • Mix the batter with chicken: Take out your chicken from the refrigerator and remove the wrap from the container. Then pour the flour batter over the chicken. Mix them well with your hand. Keep them aside.

  • Fry the chicken: Place a large frying dish on the stove and pour vegetable oil into it. Turn on the stove and wait until the oil heat perfectly. Heat the oil to 370F/187C. By using a skewer or toothpick, put each piece of the chicken into the hot oil. Make sure to move the chicken continuously. After 1 to 2 minutes, remove the chicken from the oil. You need to fry this chicken twice to make its skin crispier.

  • Fry the chicken twice: After a few seconds, put the chicken back in the oil. Move the chicken continuously and fry them until they become golden brown. After a few minutes, take the chicken out of the oil.
