Ingredients

  • 4 pieces of chicken breast with rib

  • 20 corn tortillas

  • Black or pinto beans

  • Sweet corn

  • 5 Roma tomatoes

  • 5 New Mexico or guajillo Chile pods

  • 1 Chile ancho

  • Handful of cilantro

  • 1 onion

  • Garlic cloves

  • 2 bay leaves

  • Chicken bouillon

  • 1 tbsp whole black pepper

  • 1 tsp cumin

  • Salt

  • 14 cups of water

  • Tools
  • Boiling pot

  • Strainer

  • Blender

  • Meat shredder

  • Saucepan

  • Spatula

Steps

  • Boil water with spices: Take a big boiling pot and put 14 cups of water. Now add three quarters of an onion, half of the garlic, handful of cilantro, two bay leaves, one tsp of whole pepper and five tsp of chicken bouillon. Then we will boil the whole mixture.
  • Add chicken to the mixture:  After spices mixture becomes boiling we will add our skinless chicken breast. Now wait for the chicken to boil again. Once it comes to a boil put the heat on medium and cook it for 25 minutes.
  • Cut the tortillas: While waiting for the broth, prepare the tortillas. Stack the tortillas and cut them the long way. Then cut them again in half. It will give you nice long strips of tortillas.
  • Fry the tortillas: Take a frying pan and put some cooking oil. When the oil is hot add your tortilla strips. Fry them until the become crunchy and golden brown. Now put them aside until the time of serving.
  • Get chickens out of broth: After 25 minutes take the chickens out of the broth. Let them cool down. Now put them down the shredder machine. If you don’t have a shredder machine use forks to shred the chicken.
  • Cook tomato and Chile pods: Cook the tomato and Chile pods in the same broth. Just put the Roma tomato and Chile pods in the broth and cook for 10 minute on medium heat. Don’t forget to clear seeds from the pods.
  • Blend the tomato and Chile pod: Take out the tomato and chile out of the broth. Skin them and put them in a blender. Add 2 cups of broth, quarter of onion, three garlic cloves, one tsp cumin powder and one tsp of chicken bouillon powder. Now blend the ingredients until they become smooth. The base sauce for the soup is ready. Add salt according to your taste.
  • Strain the broth: Strain your broth with a fine mesh strainer. Make sure the spices and the fats leave behind in the strainer. It will give your soup a nice silky and smooth texture.
  • Final step: Put the big boiling pot again on the stove on medium heat. Add the tomato and chile pod sauce you made before. Return all the strained broth to the pot. Wait for the soup to simmer. Now add your shredded chicken, corn and beans together in the soup. Wait for it to simmer again and your yard house tortilla chicken soup is ready.
  • Plating: for plating take your soup with handful of chicken and corn and beans in a bowl. Add the tortilla strips on top of the soup. You can add mexican cheese,sour cream and lime if you want. And if you like more spicy you can some chile ancho.
