Ingredients

  • Water

  • chicken base 1/3 cup

  • chicken breast, bone-in raw 1 10-oz.

  • Carrots 1/4 cup

  • Onion 1/4 cup

  • celery 1/4 cup 

  • Cilantro 1 tsp 

  • Fresh garlic 1 clove

  • Dried red chile pepper 3/4 cup

  • Roasted Anaheim peppers 3/4 cup

  • Corn tortillas 2 5-inch

  • Thyme 1/4 tsp

  • Diced carrots 1/4 cup

  • Diced onions 1/4 cup 

  • Diced celery 1/4 cup

  • Roasted pulled chicken48 oz, 3 oz. per bowl 

  • Tomatoes diced 2/3 cup, 2 tsp per bowl

  • Roasted corn 1/3 cup, 1 tsp per bowl

  • Roasted Anaheim peppers 1/6 cup, 1/2 tsp per bowl

  • Avocado 1 pieces,1 tsp per bowl

  • Shredded Jack cheese 2 cups, 1/8 cup. per bowl

  • Bunch of cilantro leaves, 3-4 leaves per bowl

  • Ready The Stock: Take a deep pot and pour it with water and chicken base. Add spices and boil them together.

  •  Adding Veggies: Now, Add the remaining ingredients except carrots, onions, and celery. Boil it for 30 mins. Strain the stock through a strainer and place the liquid back in the pot. (Save chicken to use later.)

  • Add Other Veggies: Diced carrots, onions, and celery, now put into the stock. Boil until carrots are soft. Let this cool before serving.

  • Serving: Pour broth per soup bowl. Add chicken, tomatoes, roasted corn, Anaheim peppers, and avocado. Garnish with tortilla strips and cilantro leaves.
