  • Fresh carrots- 2 pieces( cube cuts)

  • Chopped Cilantro- 3 tsp

  • Chopped Onion- 1 onion

  • Garlic powder-½ tsp

  • Ginger powder-½ tsp

  • Chopped hot pepper ( red and yellow) – ½ cup

  • Chopped parsley – half-cup

  • Chopped Fresh Coriander- 2 tsp

  • Chopped fresh dill- 2 tsp

  • Vegan Mayonnaise- ½ cup

  • Yellow mustard- 2 tsp

  • Green peas – ⅓ cup

  • Paprika powder- 1 tsp

  • Salt- as per taste.

  • Olive or mustard oil- 1 tsp.

  • Lemon juice – 1 tsp

  • Vinegar- ½ tsp (optional)

  • Water

  • Cut the potatoes: Firstly cut the new red potatoes into bite-sized cube shapes. No need to peel them off because the skins of potatoes contain lots of nutrients. Wash the cut potatoes finely.

  • Boil the cut potatoes with salt: Place a round pot on medium-high heat. Cover the potatoes with enough water. Level up the water at least 2 inches over the potatoes. Salt the water with 1 tsp. Boil them in medium-high heat for 2 minutes. Then lower the heat and cook them until pierced by a fork easily.

  • Drain the boiled potatoes: After 10 minutes, drain the cooked potatoes and insert a fork or knife into them. Check they boiled enough for mashed up. Let them cool properly.

  •  Chop the peppers and onions: Now, bring a chopping board, chop some red and yellow peppers and dice a medium onion finely. Just Peel off the onions and wash them before chopping.

  • Combine them finely: Now, drizzle them with ½  tsp of vinegar and 1 tsp of lemon zest with juice. Allow 2 tsp of parsley. Combine now by continuously stirring until all potatoes and vegetables are coated with the dressing.

After 2 minutes, stop the stirring and allow the salad to absorb for five to ten minutes around before serving.
