As I said, it’s totally a copycat recipe of Lorna Doone Cookies. It is always easy and classic, maintaining some delicious ingredients like unsalted butter, white sugar, flour, vanilla extract, and a few others of shortbread.

Optionally, you can add some milk and sweet butter. It’s completely hearty and satisfying to make also. This recipe is so simple and irresistible to make and to have.

Ingredients

  • Unsalted butter – 10 tsp.

  • Confectioners’ sugar- 1/2 cup.

  • Vanilla extract – 1/2 tsp.

  • All-purpose flour – 1.5 cups.

  • Kosher salt – 1/2 tsp.

  • Beat the butter and salt: Bring a kitchen aid or a stand mixer with an attached paddle.  Pour 10 tsp of unsalted butter and add 1/2 tsp of salt. Beat the butter for a while.

  • Add sugar and vanilla extract: Now, add 1/2 cup of confectioners’ sugar. Beat them again until it gets a fluffy mixture. Pour 1/2 tsp of vanilla extract. Mix up together and make a light and fluffy cream.

  •  Allow the flour directly: Turn off this kitchen aid for a while. Take another bowl and place 1.5 cups of flour. Now, again go for beating. While the beating is running, pour the flour slowly. Mix them all well on low speed.

  • Make a dough and shape: Now, transfer the mixture onto a board and knead them until it turns into a dough form.  Now, place it in a plastic wrapper and press them to give it a rectangular shape.

  •  Knead the dough: Now, sprinkle some flour onto a plastic wrapper and knead the dough with your hands first, then throw them on the surface and press it like pizza dough.

  •  Keep it in the fridge: Next, shape the dough into a medium-thin rectangle of soap shape. Wrap it with the wrapper. And place it in a fridge for a couple of hours.

  • Bring and cut it up: Bring out the bar and cut it up into thin slices around 1-inch thickness. Maintain a nice consistency. Cut it into uniform slices. Make your hand easy and use a sharp knife.

  •  Prepare and bake: Preheat the oven to 350 degrees. And grease the parchment paper with some butter. Place it on a baking sheet. Arrange the bread slices one after one.

  • Make docking: Before the baking process, make docking onto the top of the cookies using a fork. Pattern as some little holes.

  • Bake and serve: Now, place the baking tray into the preheated oven at 170 degrees.  Bake them for only 10 minutes. Bring them back and serve them with yummy peanut butter or chocolate Nutella.
