This ‘Old Hickory House Brunswick Stew’ is an extremely simple and yummy dish that is prepared with chicken breasts, beef soup based, herbs and seasonings. Making a good stew takes a huge time to cook. Garlic, ginger, onion, and chili sauce need to be added thoroughly. Within 1 hour, they together turn into a  delicious stew.

Ingredients

  • Onion – 1 cup

  • Garlic – 2 cloves.

  • Oil- 2 tsp.

  • Boned chicken breast- 3 / 4 pieces. 

  • Beef soup base-  1.5 tsp.

  • Tomato pastes- 1 bowl. 

  • Frozen whole kernel corn- 1 package.

  • Frozen cream style corn – 1 can.

  • Frozen baby lima beans- 1 package.

  • Chili paste – 1 cup.

  • Yellow mustard paste – 2 tsp.

  • Worchester sauce – 1 tsp.

  • Brown sugar- 1 tsp.

  • Black and red pepper – 1 tsp.

  • Salt- 1 tsp.

  • Lemon juice – 2 tsp.

  • Hot sauce – 1/2 cup.

  • Cook onions and garlic: Bring a large pan. Heat the pan with 2 tsp of oil. Pour 1/2 cup of onion cubes and 1 tsp of garlic paste. Saute until they turn brown.

  • Mix beef soup base in liquid: Take a medium small jar with water. Pour 1.5 tsp of beef soup base. Stir and mix together.

  • Add chicken and mixed liquid: Pour the mixed liquid into the onions and 2 or 3 pieces of boned chicken breasts. Cover the pan and boil for 5 minutes.

  • Allow tomato paste and corn: Now, allow 1 bowl of tomato paste and 1 package of frozen whole kernel corn. Mix up well for 2 minutes. Try to use fresh corn instead boil.

  • Add cream corn and lima beans: Next, add 1 can of fresh frozen cream-style corn and 1 package of frozen baby lima beans. Bring to boil and reduce the heat to medium-low.

  • Place chili paste,  mustard paste, and sauces: Now, place 1 cup of chili paste,  2 tsp of yellow  mustard paste, and 1 tsp of Worchester sauce with 1 tsp of brown sugar.

  • Add seasonings and cook: Afterward, to give it a spicy flavor, add 1/2 tsp of coarsely ground black and red pepper and salt as per taste. Combine them fast. Cover the pan and cook for 1.30 minutes on medium-low heat.

  •  Shred the chicken: Uncover the pan and check the consistency. Now, shred the chicken with two large forks. Saute the curry for 5 minutes.

  • Add beef brisket and lemon juice: Finally,  you have to add 1 bowl of cooked beef briskets and 2 tsp of fresh lemon juice.  You can add 1/2 cup of hot sauce optionally. Stir for 3 minutes and cook them again for up to 10 minutes by covered.

  • Serve: Now, you can serve it warm with flour-bread and white rice. Otherwise, you can enjoy it alone.
