The Neapolitan coconut candy recipe is made with a comb package of ingredients, and you will make them with chocolates, coconut grains, vanilla extract, milk, sugar, and a few additional.

If you want, you can add your favorite extracts and flavors besides the main ingredients. You may also turn these candies into ice cream, which hits you with calm and freshness on your hot afternoon.

Ingredients

  • Grated coconuts- 3 cups.

  • Evaporated milk- 1 cup.

  • Sugar- 1 cup.

  • Margarine- 3 tsp.

  • Salt- 1/4 tsp.

  • Vanilla essence- 6 tsp.

  • Red food color- 1/4 tsp.

  • Grate the coconuts: First,  you need to arrange a coconut grind or a shallow grind. Then grate the coconuts without their juice. Be careful not to grate the brown portions of coconuts, and you just need grated white coconuts.
  • Cook the coconuts: Now, take a large saucepan. Pour 3 cups of grated coconuts. Add 1 cup of evaporated full cream milk. Pour 1 cup of white sugar and 1/4 tsp of salt with 3 tsp of margarine. Stir thoroughly and heat the pan. Cook the mixture by continuously stirring.

  • Add vanilla essence and Get sticky: After 5 minutes of cooking, the coconuts will start to clump together, and the sugar has caramelized finely. When it gets dry and sticky, low the heat.  Add 6 tsp of vanilla essence. Keep stirring again until it gets more humid.

  • Add red color: At the end of the cooking, add 1/4 tsp of red food color. Mix up together hurriedly, don’t cook over now. Total cooking time is around 50 minutes for the best output. You can add your desired color as well. Chocolate and blueberry colors are preferred.

  • Transfer and level up: When it gets perfectly sticky and smooth firm, transfer the dough into a greased baking pan. Level the dough using a spatula. Then, press the dough with a big banana leaf. This one is the best tool to flatten up the warm candy dough.
  • Cut into candies: Now, cut the warm candies by your desired shape and size. Place them into a greaseproof sheet. Fold over and give a smooth form by pressing your palm. Slice into bite-sized pieces using a sharp knife.

  • Keep in the fridge and serve: Keep the candies in an airtight container. Fridge it for a couple of hours. Then bring them out and serve simply alone. Best!
