Ingredients

  • 2 cups all-purpose flour

  • ½ cup unsalted butter

  • ½ cup sugar

  • ⅓ cup warm milk

  • 1 large egg

  • 1 teaspoon cinnamon

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 teaspoon salt ( as per taste)

how to make Gorditas De Azucar

  • Mix Dry Ingredients: Take a large mixing bowl, add 2 cups of all-purpose flour, and then all the dry ingredients one by one. Let’s call out them and add them, so we don’t leave anything. Add ½ cup of sugar, 1 teaspoon of cinnamon, ½ teaspoon of baking soda, ½ teaspoon of baking powder, and salt as per taste. Now use the hand whisk and whisk to mix all these dry ingredients.

  • Add Other Ingredients: Let the butter come to room temperature, then mix it with flour. Use your hand and mix well until you get small crumbles. This will ensure the gorditas become crunchy. Now add the egg (beaten), and mix again. Finally, pour warm milk, mix and make a soft dough.

  • Let The Dough Rest: Divide the dough and make a few small bowls. Keep them in a bowl covered with a cotton cloth and leave for 20 minutes to rest.

  • Make Gorditas: Take a tortilla press, keep the small bowls in the middle, and press firmly to make gorditas. Don’t press too hard; you have to keep the gorditas width not less than ½ inch.  Thickness is what we need to make tasty gorditas. Like this, make all the gorditas and keep them aside.

  • Cook Gorditas: Turn on the stove, put a griddle on it, and set it on high flame until it becomes hot. Then lower the flame to medium-low, place the gorditas on the griddle, cook for 2 minutes, then flip the side and cook for another 2 minutes. You have to cook them until they are brown, so if it takes a little more time, give time and cook nicely.

  • Serve: You can serve gorditas warm or cold, whatever you like. If you want it to serve hot, keep it covered with a cloth, so it stays warm. To make the gorditas tastier, put some butter or ice cream on top and serve on a serving plate.

How To Store Gorditas De Azucar

I love warm gorditas, but they also taste good with ice cream on top after cooling down. On busy weekdays, I prefer gorditas as breakfast. For those days, I made some gorditas at night, placed them in separate bowls, and let them chill in the fridge overnight; if you don’t have time, 2-3 hours is enough.

Then I grab all of them, wrap them with wrapping paper, and store them in the fridge. This way, gorditas stay in good condition for up to 2 months. Whenever you need to eat, just take them out, thaw them for 2 minutes and let them go in a hot skillet. Fry just as usual, and it’s ready in 10 minutes. 

But if some fried gorditas leftovers are there, I pick them up, put them in an airtight container, and store them in the refrigerator. I ate them latenight/midnight or the next morning, but you can eat them for up to 3 days. 

Tips and Tricks

  • To get the perfect crisp gorditas, you must ensure better crumbles. The smaller crumbles you have, the more crips and soft gorditas you will get. 
  • Cover the gorditas ball with a moistened cotton cloth, so it doesn’t dry out and get the perfect texture. 
  • While frying, the gorditas keep flipping and frying. If you allow the gorditas to stay on one side for too long, they will get burned or brown, ruining the taste. So flip and fry slowly to get better gorditas.
