  • Make the crepe cake batter: In a saucepan combine milk and sugar. Then heat the milk until it is warm to the touch. Then in a mixing bowl beat 3 large eggs. Then slowly add the warm milk and melted butter to the mixer. Continue whisking while adding milk and butter.

  • Add dry ingredients into the batter: Now place a fine-mesh sieve over the mixing bowl and gradually add cake flour, baking powder, and matcha powder. Then divide the dry ingredients into two parts and shift half part into the batter. To combine wet, and dry ingredients whisk them together continuously. Then shift the leftover dry ingredients into the batter and whisk them nicely so that no lump can exist in the batter. 
  • Refrigerate the cake batter: Before refrigerating the batter to get a smooth batter set a fine-mesh sieve over a bowl and pour the cake batter. By doing this you will get a smooth texture batter without any lumps. Then cover the bowl with plastic wrap and keep them inside the refrigerator for 1 hour.

  • Cook the crepe: Heat a 10 to 12-inch non-stick frying pan on low heat. Brush oil on the pan and remove excess oil with a paper towel. Now, pour the batter enough to cover the bottom of the frying pan. Take time and slowly swirl the crepe batter with the pan. Without touching cook the crepe for about 2 minutes. After 1 minute of cooking flip the crepe using a spatula, chopstick, or hand. Continue this cooking process until all the crepe batter is used.

  •  Make the whipped cream: In a large bowl with water add some ice cubes and set one small bowl on top. Then add 1 cup of heavy cream and start whisking the cream at a lower speed. Once bubbles are coming, you need to add granulated sugar slowly. Whip the cream until stiff.

  •  Assemble the crepe cake: Prepare two long parchment paper strips on a rotating cake stand or a working surface. These strips will use as the first layer of crepe. Now place the larger crepe and this will be the top layer of the cake. Then put cream and spread all around the crepe, leaving the outer 1 ½ inch. After spreading cream place another crepe on top and again spread whipped cream, leaving the outer by ½ inch. Continue the whole process until place your last crepe on the top.

  • Transfer the crepe cake into the shallow dish: Now, prepare a round curve shape shallow dish and place plastic wrap on top. Then transfer the crepe into the middle of that shallow dish and remove the strips.

  • Use cold heavy cream to whip the cream. Because cold whip cream is easy to whip up, and cold cream can hold its shape while frosting.  
  • Avoid using bread flour and plain/all-purpose flour for making this crepe cake. Because this flour will make your cake rubbery. Only use cake flour for this crepe cake recipe. 
  • Don’t over-mix or over stir the cake batter, otherwise, your cake batter will get a rubbery texture. 
  • Don’t overheat the pan, too hot a pan will end up your crepe too fast and you will not swirl the batter into a thin layer.
